Tater Tot Casserole

A cheesy ground beef casserole with a thickened savory sauce, topped with a crisp layer of tater tots and melted cheddar.

Ingredients
  

  • 1 lb ground beef
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 can 10.5 oz condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 tsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 cup frozen corn
  • 1 cup frozen green beans optional
  • 1 1/2 cups shredded sharp cheddar divided
  • 1 bag 28-32 oz frozen tater tots

Method
 

  1. Brown the beef and onion, 7-8 minutes, until no pink remains (160°F internal).
  2. Drain fat, add garlic and paprika, cook 30 seconds.
  3. Stir in soup, broth, sour cream, Worcestershire, salt, and pepper. Simmer 3-4 minutes until thickened.
  4. Fold in corn and green beans, remove from heat.
  5. Spread in a greased 9x13 dish, top with 1 cup cheddar.
  6. Layer tater tots evenly over the top.
  7. Bake at 375°F for 40-45 minutes until tots are deep brown and sauce bubbles at the edges.
  8. Add remaining cheddar, bake 3-5 more minutes until melted.
  9. Rest 8-10 minutes before serving.

Notes

Storage: Refrigerate up to 4 days in an airtight container, or freeze baked or unbaked for up to 3 months. Reheat covered at 350°F for 20 minutes.
Notes: Shred your own cheese for a smoother melt. Freeze unbaked rather than baked leftovers for the best texture after thawing.
